I always have ground pork in our freezer. But can I turn some of that unseasoned ground pork into breakfast sausage for recipes I often use?

Breakfast Sausage Is Expensive
We don’t eat breakfast sausage often but occasionally we have need for it. So on the limited occasion that we needed it we’d buy it at the store.
But I’m always surprised at how expensive that little one-pound package of breakfast sausage costs! Especially since we have an abundance of ground pork already in our freezer.
So I sat out to season our ground pork into homemade breakfast sausage. I settled on what I think is the simplest breakfast sausage seasoning blend.
Experimenting With Homemade Sausage Seasoning
I went looking for various seasoning blends online. But many of them called for seasonings I don’t typically use or have on hand.
It kinda defeats the purpose for me to go buy a small bottle of spice that I may never use before it gets old.
So I started experimenting with the standard seasonings I always have in my seasoning arsenal.
I mixed various seasonings into that ground pork and cooked my homemade breakfast sausage in my *Solar Oven in preparation for making my breakfast muffins. (cause DANG it’s too hot for inside cooking!)
Then I gave RancherMan a little nibble of my homemade-seasoned and cooked breakfast sausage. Poor thing, he’s always my kitchen guinea pig – LOL.
He was super excited about the flavor and said I nailed it! This seasoning blend works perfectly for us.
Ingredients For Breakfast Sausage Seasoning Mix
The seasonings I chose to make one pound of homemade breakfast sausage were all simple standard ingredients:
½ teaspoon Dried Parsley
½ teaspoon Rubbed Dried Sage
½ teaspoon Crushed Red Pepper
½ teaspoon Ground Coriander
¼ teaspoon Cumin
Salt & Pepper to taste (I use ½ tsp each)

Our Breakfast Sausage Needs
There are many dishes where you’d want breakfast sausage:
Eggs & Sausage – You know, a typical breakfast. (duh!)
All-In-One Breakfast – Eggs, sausage and cheese baked into a breakfast ‘muffin’ you can eat with one hand!
Hamburgers on the grill – Mix 50/50 with ground hamburger for the juiciest grilled burgers
Breakfast Quesadillas – Scrambled eggs, sausage & cheese tucked inside a crispy grilled tortilla.
Egg/Sausage biscuit breakfast – Eggs & sausage patties tucked inside a homemade Buttermilk Biscuit.
Farmer’s Breakfast Bake Casserole – easy casserole with eggs, cheese and sausage on a hash brown crust.
So when we’re making one of those dishes in the past we’d just go to the store and buy a single package of the commercial stuff. But it’s just seasoned ground pork! Why is it so expensive?
I love this homemade breakfast sausage seasoning mix. Easy, cheap and made with normal seasonings in my pantry.
Flexible Breakfast Sausage Seasoning Recipe
So go ahead & make your own breakfast sausage using this homemade seasoning mix. Feel free to tweak the ratios to your family’s liking.
I had a reader suggest that there was too much cumin in this mix for her family’s tastes. So by all means, reduce or increase the quantity of any of these seasonings to most thoroughly satisfy your family’s preferences!
But for our homestead, this homemade sausage seasoning is perfect!

Homemade Breakfast Sausage Seasoning Blend (Per 1-lb ground pork)
This is the simplest seasoning blend to make your own breakfast sausage from a pound of ground pork. No fancy specialty seasonings here - just a few of the basics. #TexasHomesteader+

- 1/2 teaspoon dried parsley
- 1/2 teaspoon rubbed dried sage
- 1/2 teaspoon crushed red pepper
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cumin
- Salt & pepper to taste (I use 1/2 tsp each)

Mix all ingredients into a pound of ground pork. Cover and refrigerate overnight for best results.
Recipe Notes
I like to mix it up the day before if I know I'll be using it soon. That allows all the seasonings to marry beautifully overnight. The flavors are all blended when it's time to cook the sausage the next day.
But to be honest I've totally mixed this up on the fly right before cooking my sausage. Although I still prefer a little more pre-planning and mixing it up the night before, it's still fine that way.
