Reducing waste in the grocery budget is a hot topic right now. Rushed parents and over-scheduled folks are doing the best they can to keep their grocery budget low in these days of high-priced groceries.
But the USDA estimates that between 30% and 40% of our food is ending up in landfills.
Planned leftovers is purposely cooking more at one meal with the intent of turning those leftovers into a completely different kind of meal the next night.
We’d purposely grilled more chicken & vegetables so I could incorporate planned leftovers for the next day (which means a night off cooking!) That excess grilled food was quickly changed into delicious homemade chicken fajitas in minutes.
I cook a large amount of dried pinto beans at one time. Then I portion out and flavor them in several different ways. It’s fast because the beans have already been cooked. And we enjoy lots of variety for different meals too!
