Leftover meatloaf can be so versatile. I turned plain leftover meatloaf into something new and delicious – beef quesadillas!
It made a lot – enough for supper and lunches the next day too. And since I was using leftover food, it was almost free.

Looking for a fast supper idea? Chicken Pot Pie from scratch is super fast when you use leftover chicken.
I made the pie crusts & cream of chicken soup from scratch too but you can use purchased crust & soup instead if you like. Fast, easy & DELICIOUS!

A dear friend told me about dehydrating tomato puree (sometimes seasoned) into a leather. WHAT?? Tomato leather??
Yes, tomato leather can be used to simplify your pizza night. Just plop a tomato leather on top of your crust and start adding fillings. The leather rehydrates as the pizza cooks. Oh yeah, I’ve gotta try this!

Well it looks like a sunshiny day and the wind will not be high. So I can’t think of a better reason to use my * Solar Oven. I want to bake boneless, breaded pork chops – OUTSIDE!
It doesn’t matter if it’s going to be hot or cold outside. That’s because the outside temps don’t really affect the cooking with a solar oven. I’ve heard it said that ‘all you need is a shadow‘.
Summer or winter – as long as the sun is shining and the wind isn’t high enough to mess with the reflectors, solar oven cooking is a GO!
Today I think I’ll try my hand at baked pork chops…
