Supper Fast: Poor-Man’s Steak (or Stuffed Hamburger)

Poor-Man’s Steak (or stuffed hamburger) is a ground meat patty stuffed with grilled onions, peppers & melted cheese. I like to add diced jalapenos for a spicy kick!

We enjoyed this stuffed hamburger patty served on a bed of fried potatoes & topped w/brown gravy. This simple recipe is sure to bring rave reviews.

Breakfast Biscuits With Scrambled Egg, Ham & Cheese

In deciding a company-worthy breakfast menu for recent overnight guests, I decided that breakfast biscuits might fit the bill quite nicely.

I like to have ham & cheese egg biscuits. My guests call them BOBs (Breakfast-on-a-Biscuit)

The beautiful thing is I can make everything in advance & just assemble & enjoy.

Solar Cooking: Cheesy Chile-Chicken Casserole

I’m in the mood for a cheesy chile chicken casserole. This simple recipe can be cooked the traditional way in a standard oven. But I often cook it outside in my solar oven.

You see, today the temps outside are spiking and humidity is on the rise. It’s absolutely miserable outside! So I’ll be utilizing my solar oven to make my casserole.
