RancherMan’s quite the accomplished hunter. As such, we always have a freezer stocked full of pork roasts and I enjoy finding different ways to cook them. I often use my slow cooker to prepare those roasts. Most of the time I’ll flavor it very generically so I can remake the leftover cooked meat into whatever we’re in the mood for. I’ve made Carnitas Tacos, or Pulled-Pork Enchiladas, or even BBQ Sandwiches & more.
But today I’m in the mood for an Italian-style roast with diced tomatoes, chunky onions, crushed garlic & minced fresh herbs.

I’m not gonna lie, I love the convenience of a slow cooker. I have two different sizes of slow cookers and they’re busy cooking something all of the time here. Sometimes both slow cookers at the same time!
But what’s not to love? I mean, you combine ingredients the night before or even in the morning, set the crock in its base, turn it on and supper cooks while you’re not even there. Now that’s the kind of laziness convenience that speaks to me!

I’m making my own inexpensive RANCH-STYLE BEANS these days. The recipe is easy using items I typically have in my pantry. I prefer to cook a large 2-lb bag of dried beans at a time & it makes a LOT! Feel free to scale it down to cook a smaller bag of beans.
