Homestead Hack: Don’t Flush Cooking Fat Down The Drain!

We’ve all probably done it – rinsing out remaining fat and letting it go down the drain. A quick flip of the garbage-disposal switch and the greasy problem is gone. Right?

I’ve written before about how I’ve discovered how the problem Is NOT Gone when we flush things through our kitchen sink pipes. I’m not casting stones here. I spent plenty of my younger years flushing things down the sink, from plate scrapings to burnt-on food. And yes, the fat too. I figured if I used hot water it would simply flush that fat away safely.  But I’ve learned a lot since then.  I now know you should never flush grease or fat down the sink. But how do you dispose of it? Don’t worry, it’s easy – check out this Homestead Hack.

Need a Quick & Easy Side Dish? Rosemary Rice

We like to invite my parents to join us for supper whenever we can. There’s just something about breaking bread together that bonds people, don’t ya think? And heck, my folks live relatively close so why not?

Typically RancherMan will grill the main entree and I’ll provide the sides and dessert. One of our favorite sides is Roasted Fresh Vegetables because it’s eye-catching, healthy and easy. But I’ve made that side the last 2-3 times that they joined us. Although they loved it, I wanted something different this time. Hey, I have that gorgeous rosemary bush right outside my door. Why not put it to good use? I decided to make rosemary-flavored rice for a quick & easy yet delicious side.

Favorite Jelly Recipes on our Blog…

A while back we changed the name of our little ole blog to Texas Homesteader. There were many reasons for this, but mainly so that when I share a recipe or gardening tip, readers know right away what elevation or planting zone I’m referring to.

But whomever previously had the blog name ‘Texas Homesteader‘ before us apparently had some rockin’ jalapeno jelly. I’m constantly getting hits for folks looking for it. But I’m sorry to say it’s not here.

Although we love, love, LOVE jalapenos in almost everything we eat, neither RancherMan nor I enjoy sweet/spicy combinations. But I do share some delicious jelly recipes on this blog. So if you’ve come looking for Jalapeno jelly recipe – sorry I can’t help ya. But I hope you stick around for some of the most delicious jelly (with EASY recipes) you ever hoped to find!

Roasted Vegetables – A Quick, Easy, Healthy Side Dish

When I invite my parents for dinner, RancherMan often grills the main entree outside.  There might be grilled chicken, steak or pork. It will be delicious of course, but what will I make to go with it?

This is my mom’s (and RancherMan’s) favorite side dish.  I’m lucky it’s so quick, so easy, yet so healthy. Roasted vegetables.

Easy Pumpkin Bread Recipe (with Cake-Mix Shortcut)

Fall is in the air, and for me that always means PUMPKIN!  In searching for an easy pumpkin bread recipe I stumbled upon an easy one that starts with a box of cake mix.  Now of course you can buy your cake mix, but homemade versions abound on the internet.  I’ve been making my own spice cake mix (recipe coming soon) and love it in this pumpkin bread recipe!

Last-Minute Dessert: Cherry Pie Tortilla Rolls

RancherMan & I don’t always eat dessert, but when we do it’s usually something quick & easy.  I’ve simply cut berries in a bowl and topped with quick homemade honey-sweetened Whipped Cream, or enjoyed our healthier version of ‘ice cream‘ that uses frozen bananas and berries.  Or even whipped up a quick chocolate pudding.  All delicious, all quick & easy.

But when unexpected company comes, I want something that’s a little different (but still easy ’cause, you know, I’m a lazy cook!)  I’ve made Apple Pie Rolls using some of my home-canned Apple Pie Filling.  It’s delicious!  But now I’m thinking about cherry pie…

How To Rehydrate & Use Dehydrated Pumpkin Puree

Last year’s pumpkin harvest was truly out-o-control!  I harvested so many pumpkins!  I shared several of them with family & friends but still ended up with mountains of my own.  I love to use these heirloom pumpkins for puree in my Pumpkin Granola so I cooked ’em up & pureed them.  They were measured out into 2-cup measurements and frozen for future use.

But RancherMan was the wild-hog-hunting KING and our freezer was filled to capacity with wild pork.  But I still had two remaining pumpkins…  They had some staying power, still looking as fresh as the day I harvested them.  But I really needed to do something with them before they started to deteriorate.  But with no freezer room, what will I do? I decided to Dehydrate the Pumpkins.

Too Much Okra? Make Fried Okra Fritters!

There are a few veggies that are really a powerhouse in the garden.  Squash & okra come to mind.  They’ll grow & produce in the most challenging weather, usually producing well enough for you to eat as much as you want & still have plenty to share with friends & family.  I like okra either pickled or fried, but I’ve never gotten onboard with the mucilage texture inside of okra. So we didn’t plant okra this year. Luckily I was gifted with a bag of okra from a friend’s garden.  So I got to enjoy okra without having a boatload to figure out what to do with it all!

But along with this bag of okra was a recipe for okra fritters.  Okra fritters?  I’d never heard of such.  So RancherMan & I gave them a try – they were amazing!  I asked my dear friend if I could share the recipe with you, and she agreed!
