I like to serve biscuits with scrambled eggs, cheese and a breakfast meat to overnight guests. They call them BOBs (Breakfast-on-a-Biscuit). Making the pre-formed scrambled egg disk is easy.
The beautiful thing is I can make everything in advance & just assemble & enjoy.

Don’t resort to the powdered stuff sold in packets. Homemade hot cocoa is delicious & only uses cocoa, sugar & milk – flavored with vanilla & a few miniature marshmallows floating on top. So easy! (and there’s a secret flavoring ingredient that intensifies the chocolate taste. shhhhh….)

RancherMan & I have been burning the candle at both ends lately it seems. We’ve had business commitments, familial commitments and community commitments. Truth be told we’ve been running a LOT! So half of my gallon of milk sat in the fridge & got a little too close to it’s use-by date and ended up lightly soured. I didn’t throw it away – I made cottage cheese with it! It was very quick & so easy.
Now I must say there are some very strong opinions out there on whether or not soured pasteurized milk is the same as soured raw milk. I’ve tried raw milk before but I don’t much care for it so I buy my milk. I haven’t done massive research on all the nuances into safety vs purity of raw vs homogenized milk. I think there are valid points on both sides. But in this post I’m sharing what I’ve personally done.
I’ve made this cottage cheese from lightly-soured commercially-purchased milk several times. My experience is that my homemade cottage cheese is absolutely delicious and tastes no different to me than commercially-purchased cottage cheese. I’m happy to share this easy procedure with you. But I won’t get into a soured raw milk vs soured commercial milk discussion, m’kay? We’re all friends here & you have the right to your opinion and to nourish your body as you like, just as we all do! I’m just sharing my personal experience here. So we’re all good?? Alrighty then!

As many of you know, recently I had to bring a mama cow into the barn recently. We had to milk out one of her quads since her newborn calf neglected it long enough for it to get very large. I didn’t want to risk her getting mastitis. And the longer the calf neglected it the larger it became.
Although our cows are not a dairy breed, she gave me about a half gallon of fresh milk from just that one quad! I’d never milked a cow before & I was pretty excited to get that fresh milk. So I sat out to put it all to good use. I decided to make homemade yogurt with it, but I had trouble skimming the cream easily. So I turned to my Facebook Followers to find out how they easily skimmed the cream from the milk.

Recently we had a cow give birth to a calf. Although she gave us a fine, healthy heifer calf, she was having a difficult time with her calf emptying one of her teats.
Each day that one teat grew bigger and we’d hoped that the calf would eventually latch onto it like she was the others. (we’ve had that circumstance in the past and it’s always worked out fine)
But the teat began to get so full it was large & tight and too difficult for the calf to attempt to nurse it. So she just didn’t.
I was worried about the cow developing mastitis so I knew I needed to take action. I’ve never milked a cow before. Ever. Until now. Ain’t nothin’ to it, y’all! I feel like an official country woman now!
