MYO Pumpkin Puree Using A Solar Oven

This year I planted heirloom sugar pumpkins in my garden. And when it was time to harvest them I knew I’d first be able to enjoy them for a bit as decoration. I love the way those little pumpkins looked propped on our antique cast-iron Franklin stove.

But several days later I was in the kitchen enjoying the last of my favorite pumpkin granola.  I knew that  since I planted those delicious pumpkins for use in my granola it was time to cook those babies down into pumpkin puree.

Pumpkin Puree, goodness from the garden! I have a secret weapon for keeping that cooking heat outside, even while cooking! My SOLAR OVEN! #TexasHomesteader

MYO Italian Seasoned Tomato Leather – Pizza Night Just Got Faster!

A dear friend told me about dehydrating tomato puree (sometimes seasoned) into a leather. WHAT?? Tomato leather??

Yes, tomato leather can be used to simplify your pizza night. Just plop a tomato leather on top of your crust and start adding fillings. The leather rehydrates as the pizza cooks. Oh yeah, I’ve gotta try this!

Using It All: MYO Tomato Powder

Recently I had a large quantity of tomatoes to preserve. In the process of making my sauce I removed most of the seeds and tossed them into my compost before I even cooked the tomatoes down.

When the tomatoes were cooked I used a sieve to separate the cooked tomatoes from the skins so I would have smoother sauce. 

Now I read somewhere that instead of throwing them away you can dehydrate the skins and grind them into powder to use to thicken soups or make your own tomato paste.

Oh yeah, I’m *SO* gonna do that!

I decided I wanted to make and pressure-can my own pasta sauce. Homemade sauce means you have complete control over what goes in (and more importantly, what DOESN’T!)

Preserving The Harvest: Dehydrating Bell Peppers

I’ve planted many bell pepper plants in my garden this year. But it’s still too early in the season for them to be producing. So I stumbled upon a great deal on bell peppers at the store recently. Yeah, I mean like 15 peppers for $0.99 kinda great deal! After I fainted and before I could catch a breath I grabbed up about 5 of them. Oh I suppose I could have grabbed more but I only wanted to buy what we would use.

Other than stuffed peppers (which RancherMan absolutely LOVES) I cook with bell peppers fairly often. Once I got home I found that I still had stuffed bell peppers in the freezer. Maybe I can just freeze them to use as an ingredient in my cooking? Hummm… my freezer space is pretty tight so there’s no room to chop & freeze them for later. What to do? I know – I’ll dehydrate them!

Lemon Blueberry Jam w/o Added Pectin

Now y’all know that I love me some blueberry… ANYTHING. I’ve planted blueberry bushes to keep myself in steady supply of those delicious & oh-so-nutritious orbs. But until those plants grow large enough to satisfy me I’m stuck using purchased frozen berries.

Recently I realized that I had two bags of blueberries in the freezer. So I decided to make blueberry jam with some of them.

I searched around online & decided on this recipe I found at Food.com since it didn’t contain any added pectin. Of course as is the norm for me, I amended the recipe to suit our tastes.

My blueberry jam is delicious and inexpensive. Both my jars & my Tattler lids are reusable - good for me & good for the environment! #TexasHomesteader
