Cooking Breakfast Should Include Hazardous Duty Pay!

We typically don’t eat breakfast so enjoying it is a special occasion indeed. Usually either when we’re on a vacation or every year for Mother’s Day or Father’s Day when our tradition dictates that the honoree get homemade breakfast in bed.

I typically opt for fresh fruit, yogurt and homemade pancakes. RancherMan always (and I mean ALWAYS) requests bacon, fried eggs, jalapeno/cheese biscuits and gravy.

But as I crept around the house quietly to keep from waking him as I prepared his honoree breakfast, it almost seemed like a comedy. How in the world did our grandmothers do it??!!

I treated RancherMan to a hearty breakfast of Homemade biscuits, eggs, bacon and gravy. Good grief - how did our grandmothers do it?? #TexasHomesteader

Making Egg Disks For Breakfast Biscuits – Your Own Convenience Food!

I like to serve biscuits with scrambled eggs, cheese and a breakfast meat to overnight guests. They call them BOBs (Breakfast-on-a-Biscuit). Making the pre-formed scrambled egg disk is easy.

The beautiful thing is I can make everything in advance & just assemble & enjoy.

BOB, or Breakfast on a Biscuit - is a quick company-worthy breakfast of scrambled eggs, thinly-sliced ham & cheese on a biscuit. #TexasHomesteader

Homestead Hack: Healthier Hot Instant Breakfast

My mornings usually involve coffee and computer work when I first awake. Yeah, I know breakfast is the most important meal of the day. But I’m one of those people who really needs to wake up a bit before I can even THINK about eating something.

Most warmer months I like to enjoy a jar of my favorite Homemade Yogurt, sweetened with my homemade preserves – quick, easy & healthy. OR sometimes I’ll opt for a bowl of my crispy homemade granola.

But when the chill of winter hits I really want something hot to warm me up and I love the convenience of microwave oatmeal. Now I’m not picking on the Quaker Instant Oatmeal folks, their product is delicious. But those expensive packets tend to be too small a portion for me when prepared, taste way too sweet for my palate.

Plus I don’t recognize some of the ingredients on their little packets of instant oatmeal and that bothers me too.

Oh yeah, they’re convenient, and making oatmeal ain’t nothin’ new. But I wonder how easy, cheap & healthier it would be to experiment with plain oatmeal cooked & sweetened MY way instead of theirs??
