4-Ingredient Simple Triple-Chocolate No-Bake Truffles

For Valentine’s day a couple of years ago RancherMan made me homemade Mint/Chocolate Truffles. I’ve always loved a chocolate/mint combination. 

Homemade truffles are my favorite gift he gives me. It’s something delicious of course, but I love that he makes them for me himself. A true gift from the heart.

Now he knows I’m a confirmed chocoholic. So this time he decided to make me Triple-Chocolate Truffles. (um, YES PLEASE!)

He’ll accomplish all that chocolaty goodness by using double-fudge-stuffed chocolate cookies because, well you know, a girl can NEVER have enough chocolate!

MYO Quick & Easy Healthier FUDGESICLES!

A few weeks ago I started playing with recipes for making my own healthier fudgesicles. I used RancherMan as a very willing guinea pig for several batches until I perfected it. 

Taste-Testing Homemade Fudgesicles?  RancherMan’s got a tough job, huh?  Poor guy!

I wanted to make my own fudgesicles for several reasons: They’re healthier, filled with probiotics, produce less landfill trash, are much less expensive. Plus, c’mon let’s be honest – it’s EASY!

Lemon Cookies Made w/Instant Potatoes

We were given a package of instant potato flakes. But I don’t cook with instant potatoes since we both much prefer the taste of real mashed potatoes to instant.

But y’all know how I hate to waste food, so I set out looking for ways to use them up. Thickening for soup? Sure. Topping for shepherd’s pie? Ok.

But it’s taking too long to use this bag of instant potatoes. So I set out to find a recipe to use ’em up a little faster.

Then I stumbled on a recipe to make COOKIES with them. Cookies? Really!??  Hummmm….

Homemade Mint Chocolate Oreo Truffles

RancherMan & I have a Valentine’s Day tradition: we get together in the kitchen & make a special dinner for each other.

It’s a way for us to focus fully on each other & give a gift straight from the heart. For this special meal, money is no object. And the sky is the limit for our meal choices when we’re planning it.

Usually we decide together what the meal will be & we get in the kitchen together & make the planned culinary delight side-by-side.

But when we were planning what would be our Valentine’s meal this year I told RancherMan that he could choose the entrée – anything in the world he wanted.

All I cared for was the dessert. I wanted chocolate, and I wanted that chocolate to be TRUFFLES.

Zero-Waste Microwave Popcorn – A Sustainable Snacking Solution

RancherMan & I enjoy microwave popcorn. But although those little 3-pack boxes we used to buy at the store were cheap, they were packed with not only the box but individual plastic wrappings and all those weird crinkly popcorn bags of trash. And didn’t I read that those bags had harmful chemicals?

Is there any way to enjoy it without all that trash? As a matter of fact there IS!

RECIPE: Healthier Banana Nut Bread

Our youngest daughter came home to Texas for a visit all the way from the east coast. One of her fond childhood memories is of my footed cake plate being forever filled. 

Sometimes it would have cookies, sometimes biscuits. But there was always something in it. I wasn’t about to have her walk into the house without something under that dome. But what to make?

I decided to use up some over-ripe bananas and some of my own hand-picked pecans to make banana nut bread. I made it healthier for her by eliminating the shortening called for in the recipe and replacing it with applesauce I made from apples given to me from my aunt’s tree last fall.

The bread turned out delicious! I’ll describe my procedures, but the actual recipe will be at the bottom.
