Recently I was in the mood for French toast. What a frugal choice for a quick breakfast – a little bread, a couple of eggs, a splash of milk, dash of spice and BOOM!

I don’t know why I have such a drive against food waste. Of course no one likes to WASTE food, but it’s almost an obsession for me to make sure no food goes to waste. I never ever remember going hungry a day in my life so I don’t think it’s an emotional scar of any kind.
I know it’s good for the budget to use all the food you’ve already purchased, And I know that not buying more food to replace what you’ve had to throw away is good from an environmental standpoint too. So maybe there’s where the secret to my obsession lies.
In any case, my wheels were turning on what to do with this stale, rock-hard yet expensive artisan french bread. I KNOW – I’ll make crostini crackers!

Now that we have our own chickens, eggs are certainly not in short supply. And we also always have bread in the house since you can buy a day-old loaf of french bread very inexpensively and use it for many recipes.
Today I’m making french toast… with a twist! I decided to try to make french toast stuffed with cream cheese & blueberries.

This simple, moist and zesty jalapeno cornbread recipe is on tight rotation in my Homestead kitchen. It’s lightly sweet and bakes up fast in a cast-iron skillet. You can leave out the jalapenos if you don’t like spicy food and it’s still delicious.

I recently wrote about making some pretty darn tasty shredded pork BBQ from my talented RancherMan’s successful ‘bringing home the bacon’, as it were…
The BBQ was delicious but I decided this time I’d like to bake my own homemade buns as well.
I make jalapeno-cheese beer bread often and thought jalapeno-cheese flavored beer buns might be a fun twist for this meal.
The verdict is in: They were awesome!

Our youngest daughter came home to Texas for a visit all the way from the east coast. One of her fond childhood memories is of my footed cake plate being forever filled.
Sometimes it would have cookies, sometimes biscuits. But there was always something in it. I wasn’t about to have her walk into the house without something under that dome. But what to make?
I decided to use up some over-ripe bananas and some of my own hand-picked pecans to make banana nut bread. I made it healthier for her by eliminating the shortening called for in the recipe and replacing it with applesauce I made from apples given to me from my aunt’s tree last fall.
The bread turned out delicious! I’ll describe my procedures, but the actual recipe will be at the bottom.

As I rose early one morning and glanced out the window at yet another beautiful sunrise, I wondered if the day would be good to bake bread outside. The clouds are beginning to burn off. And a quick check of the forecast shows that the weatherman promises lots of sun and low wind.
Of course in a solar oven you need the sun to bake bread, but wind can sometimes wreak havoc with the reflectors. With promise of low wind, I decided to go for it!
