I used to make chocolate no-bake cookies for our kids all the time when they were growing up. It was one of their faves and they begged me to make them often. Even our youngest who was not a big chocolate-flavor fan. (I know, hard to believe she’s actually my kid, huh??)

Anyway, our guest-poster Ashley recently shared with us her four-week journey of a diet with NO refined sugar at all!

This no-sugar version of chocolate no-bake cookies was shared on her FINAL WEEK’s update. What a great sugar-free spin on a favorite recipe!

Canning Recipe: Homemade Cinnamon-Vanilla Applesauce

I like to use plain unsweetened applesauce as a delicious snack and also as a replacement for some of the oil I use when baking. But I made a LOT of applesauce. I’m thinking about maybe using some of it to make an even sweeter treat: Cinnamon-Vanilla flavored applesauce.

No Sugar Challenge – WEEK FOUR! (2 Sugar-Free CHOCOLATE recipes)

TAMMY’S NOTE: This No-Sugar challenge documents Ashley’s 30-day attempt to remove PROCESSED SUGAR from their diet.  This challenge allows her to use natural sugars such as fruit, honey or true maple syrup, therefore it’s not meant for a diabetic alternative, simply a personal-health challenge.

It’s official! The challenge has been completed. I can’t believe it has been a whole month without any refined sugar. There has been some discussion over the past weeks about what constitutes sugar during the challenge. Some people don’t think honey and 100% maple sugar should be allowed during the challenge, but this is simply what worked for me during my challenge.

I have felt that in a very small moderation that honey has added enough of the sweetness that I craved so hard for the first half of the challenge that it made it an easier transition. If I decide to be as rigid in the future with the sugar-free diet, I may eventually cut those sweeteners out as well. This whole process has been one big learning experience the whole way through, but it has been a lot of fun learning along the way.

Spicy Baked Jalapeno Popper Rolls

My daughter & I were in my kitchen recently dreaming up a brand new recipe – a combination jalapeno popper and egg roll, all rolled into one! We didn’t want anything quite as cheese-heavy as traditional poppers. We wanted a savory filling of black beans and spices along with onions, garlic, cheese, etc. As we sat out to experiment to make a recipe we both agreed – the final result was delicious!
