Corn Dodgers – An Accidentally Simple Recipe

by Texas Homesteader ~

I was in a hurry. We were planning a day trip to see my father & I always try to bring food along so he doesn’t have to bother with ‘entertaining’.

So early that morning I made the Homemade Soup and some homemade Apple Crumble. And dad loves cornbread, so I whipped up some of my homemade cornbread too (no Jalapenos this time though…)

But as RancherMan came into the kitchen he  saw ‘that‘ look on my face. “What’s wrong?” he asked.

UGH! My cornbread wasn’t rising. In my haste to get everything done I’d apparently forgotten to add the baking powder.

Looking at the flat cornbread & to make me feel better he said: “Don’t worry, I’ll eat them. They’ll be CORN DODGERS!”

Corn Dodgers are like cornbread, but more dense and not as crumbly. My baking mistake had delicious results and I'll be making them from now on. #TexasHomesteader

How To Make Dehydrated Blueberry Powder

by Texas Homesteader ~

I have a couple of bags of frozen blueberries in my freezer. But right now freezer space is at a premium. So I need to empty some of its contents and one of those bags of frozen blueberries needs to come out.

I’ve got plenty jars of jelly/jam in my pantry so there’s no need right now to make more Blueberry Jam. And a person can only (healthily) eat so many Blueberry Muffins.

So my thoughts turned to ways to dehydrate some blueberries for my pantry instead. Turns out it was pretty easy.

Dehydrated Blueberry Powder. Convenient to store in the pantry and stir into yogurt or pancake or muffin batter #TexasHomesteader

Favorite Feature In My Homestead Kitchen: Drop-Level Countertop

by Texas Homesteader ~

So if you’ve been following along my path to simplicity, you know I bake bread.

A LOT!

It’s true that handsome RancherMan of mine is a certified bread-a-holic. He loves bread in all its forms that’s for sure. But he loves my homemade bread the most.

Since I’m always making bread, my favorite feature in my homestead kitchen is this little section of counter top. It’s purposely dropped to a lower level to make my bread-making easier.

My favorite feature in my homestead kitchen is my drop-level countertop. It makes the task of kneading bread so much easier! #TexasHomesteader Continue reading

Favorite Jelly Recipes on our Blog…

by Texas Homesteader ~

A while back we changed the name of our little ole blog to ‘Texas Homesteader. There were many reasons for this, but mainly so that when I share a recipe or gardening tip, readers know right away what elevation or planting zone I’m referring to.

But whomever previously had the blog name ‘Texas Homesteader‘ before us apparently had some rockin’ jalapeno jelly. I’m constantly getting hits for folks looking for it. But I’m sorry to say it’s not here.

Although we love, love, LOVE jalapenos in almost everything we eat, neither RancherMan nor I enjoy sweet/spicy combinations. But I do share some delicious jelly recipes on this blog.

So if you’ve come looking for Jalapeno jelly recipe – sorry I can’t help ya. But I hope you stick around for some of the most delicious jelly (with EASY recipes) you ever hoped to find!

We have lots of great jelly recipes on our site, some don't even require added pectin. Come see how easy it is! #TexasHomesteader
