This simple peach cobbler recipe uses canned peaches and is baked in a 10″ cast iron skillet. Quick enough to bake on a random weeknight yet special enough for company.
Blackberry season is here! So it’s only natural that our thoughts turn to those sweet juicy berries. I like to go out early in the morning when it’s still cool and collect buckets of the delicious berries. Of course sampling quite a few as I pick them fresh off the vine.
I’ll bring the rest inside, give them a quick wash and spread them on a towel to dry.
If I have more than I can use fresh, I’ll flash-freeze them on a cookie sheet and then place them in a freezer bag. That way they stay separated and I can use my measuring cup to scoop out the frozen berry measurement I need for my recipe.

After a pretty modest supper one night I asked RancherMan if he’d like me to offset the simple-food offerings of the meal with a delicious homemade dessert. Of course he said yes!
