I was able to repurpose an old, rustic, rusted & misshapen galvanized tub to add beauty to our porch landscape. I planted a blueberry bush in it and I love how it looks.

I have a couple of bags of frozen blueberries in my freezer. But right now freezer space is at a premium. So I need to empty some of its contents and one of those bags of frozen blueberries needs to come out.
I’ve got plenty jars of jelly/jam in my pantry so there’s no need right now to make more Blueberry Jam. And a person can only (healthily) eat so many Blueberry Muffins.
So my thoughts turned to ways to dehydrate some blueberries for my pantry instead. Turns out it was pretty easy.

I love blueberries! I’ve tried to grow blueberries several times here on the Homestead. But in the botanical hole of death that is our yard, it’s not been successful with the exception of my Miniature Blueberry planted in a galvanized tub.
So instead I usually buy them. I can’t typically afford the fresh berries but I’m constantly using frozen blueberries by stirring them into my Homemade Yogurt or blending them with frozen bananas to make a healthy, cold summertime treat.
Sometimes I thaw them & include them in my mixed-fruit bowl when I’m serving a cool yet healthy dessert.
But recently a friend invited me to go with her to a you-pick place to pick fresh blueberries. Oh how delicious, I came home with about a gallon of those big beautiful blueberries! I can’t typically afford to buy fresh blueberries so this was a treat indeed.
Sure I still stirred them into my yogurt and even ate some by themselves. But I really wanted to do something special with them.
Hummm… I know, I’ll make homemade blueberry muffins!

Now y’all know that I love me some blueberry… ANYTHING. I’ve planted blueberry bushes to keep myself in steady supply of those delicious & oh-so-nutritious orbs. But until those plants grow large enough to satisfy me I’m stuck using purchased frozen berries.
Recently I realized that I had two bags of blueberries in the freezer. So I decided to make blueberry jam with some of them.
I searched around online & decided on this recipe I found at Food.com since it didn’t contain any added pectin. Of course as is the norm for me, I amended the recipe to suit our tastes.

Now that we have our own chickens, eggs are certainly not in short supply. And we also always have bread in the house since you can buy a day-old loaf of french bread very inexpensively and use it for many recipes.
Today I’m making french toast… with a twist! I decided to try to make french toast stuffed with cream cheese & blueberries.
