  • 1 pound Dry pinto beans
  • 2 quarts broth or water
  • 1 teaspoon salt

Instructions

  1. Inspect dry beans and remove any rocks.

  2. Rinse inspected dry pinto beans and place in a large pot. Add water, covering beans by 4"-5". Soak about 8 hours for beans to absorb water.

  3. After soak time is done, drain and rinse beans, placing them in the Instant Pot inner liner.

  4. Add salt and broth, making sure to cover soaked beans by at least 1" of broth. Then lock Instant Pot lid in place with lever on 'Sealing'. Cook on high pressure 30 minutes with additional 10 minute natural release time.

  5. Release remaining pressure and remove the lid. Serve beans hot.

Recipe Notes

Older Beans Need Longer Cook Time - If your beans still seam overcooked you can cook them 5 minutes longer. Test recooked beans and add cook time as needed. Make sure your beans remain covered with water or broth during cook times.

To Soak Beans or NOT To Soak Beans? - I always soak my beans, but many say it's not necessary. If you're cooking unsoaked beans you'll need more broth. Make sure unsoaked beans are covered by at least 2"-2½" of broth or water before cooking.

Additional Seasoning - I like to add 3 Tablespoons of my homemade Pinto Bean Seasoning per lb of dry beans and a chopped onion before cook time for the best flavor.
