Ingredients

Filling

  • 5 cups frozen blueberries
  • 2 tablespoons sugar
  • 3 tablespoons flour
  • 1/2 lemon zested & juice extracted (about 2 teaspoons zest, 2 tablespoons juice)
  • ½ tsp vanilla extract

Topping

  • ¾ cup brown sugar, (can add up to ¼ cup more for a sweeter oat topping)
  • ½ cup all-purpose flour
  • ½ teaspoon cinnamon
  • 1 ½ cup rolled oats
  • ½ cup 1 stick or 4 oz butter, softened
  • 1 cup chopped nuts optional

Instructions

  1. Preheat the oven to 375°F.
  2. In a small bowl mix 2 tablespoons sugar and 3 tablespoons flour. Set aside.
  3. In a 2-quart 8”x8” baking dish add 5 cups frozen blueberries, the zest and juice of half a lemon & ½ teaspoon vanilla extract.
  4. Sprinkle granulated sugar/flour mixture evenly over blueberries and fold to completely coat blueberries. Set aside.

  5. In separate container combine ¾ cup brown sugar (can add up to ¼ cup more brown sugar for a sweeter crust), ½ cup flour, ½ teaspoon cinnamon, 1½ cup oats, 1 stick (1/2 cup) softened butter, and 1 cup nuts (if using). Mix until crumbly. Sprinkle dry mixture evenly over blueberries.

  6. Bake 35-40 minutes or until the top is golden brown and the filling is bubbly. Cool slightly and serve warm. (The filling continues to thicken as it cools.)

Recipe Notes

This recipe fills a 2-quart casserole dish, but as the blueberries cook they'll bubble up slightly and then reduce. So there should be plenty of room for your blueberry crisp!
