Dessert-for-Breakfast Muffins

This simple sugar-free breakfast muffin recipe uses bananas, berries & oats but NO refined sugar. Enjoy a healthy start to your morning. ~ Texas Homesteader ~

  • 3 cups rolled oats
  • 2 eggs
  • 3 bananas - mashed
  • 1/2 cup berries fresh or frozen
  • 1 cup milk I used coconut, but any kind is ok
  • 1 Tbsp vanilla extract
  • 1 Tbsp baking powder
  • opt. 1/4 c unsweetened shredded coconut
  • opt. cinnamon or nutmeg sprinkled on top before baking

  1. Preheat oven to 375 degrees.

  2. Mix all ingredients in a large bowl until even distributed. Spoon into muffin cups (makes approx. 24)

  3. Bake for 20-25 minutes or until firm. Cool on rack for 10 minutes.

Recipe Notes

Can be enjoyed fresh or stored in refrigerator for up to 5 days. Feel free to enjoy these as breakfast, snack, or dessert.
