Quick & Easy Taco Soup

This simple taco soup is perfect for days when you don't have time to cook. Simply brown ground meat and then dump all ingredients into a slow cooker. Supper is ready when you are! ~TxH~

Ingredients

  • 2 lbs Ground Meat
  • 1 Onion, chopped
  • 1 pkt taco seasoning
  • 1 15-oz can Corn, drained
  • 1 15-oz can Black Beans, drained & rinsed
  • 1 15-oz can Ranch-Style Beans, Undrained
  • 1 10-oz can Rotel Tomatoes, undrained (Spicy blend if you like spice!)
  • 1 15-oz can Tomato Sauce
  • 1 7-oz can Green chiles
  • 1 15-oz can Beef broth

Instructions

  1. Saute chopped onion in a small bit of oil until translucent.

  2. Add ground meat and cook until no pink remains. Drain meat and sprinkle taco seasoning, stirring to blend together.

  3. Place drained meat and all remaining ingredients into slow cooker. Turn cooker on low and warm through.

  4. Serve soup in bowls. Top with garnish if desired: sprinkling of shredded cheese, dollop of sour cream, chopped chives or sliced jalapeno.
