Recipe: Cheesy Spaghetti Squash Cooked In Shell

Are you wondering what to do with that garden-fresh spaghetti squash? I like to cook it in the microwave & then shred the strands with a fork.

Then I sauté onions, garlic & bell pepper, add the cooked squash, mix it all with cheese and serve the cheesy spaghetti squash right in its own shell.

RancherMan will happily eat his squash… if I serve it lasagna style!

Easiest Vanilla Wafer Cookie Recipe

Vanilla wafers. You know the ones, those small golden cookies that everyone uses when they make banana pudding. They’re delicious, but other than when eating banana pudding I’d never really given them much thought.

I’d invited my parents over to join us for supper. Dad loves when I make dessert so I almost always do when they join us for a meal. This time I’d decided to make banana pudding.

As I was making my grocery list for the meal, I paused when I added vanilla wafers to the list. I mean, how hard could they really be to bake up fresh? As it turns out, not hard at all!

This vanilla wafer cookie recipe is simple and the cookies bake up fast. They're lightly crisp and slightly chewy, and very buttery! #TexasHomesteader

Instant Pot Goulash – A Fast Meal That Cooks In Just 4-Minutes

It’s true, I was late to the game in getting my very own Instant Pot. Oh sure, others raved about their Instant Pots, but I just wasn’t convinced.

Until I was!

Now I use my Instant Pot All. The. Time.

One of my favorite meals to make with it is Instant Pot Goulash. I mean – brown the meat, dump in the rest of the ingredients, press a button for 4 tiny minutes cook time & walk away?

Yeah, that’s my kinda cooking, y’all!

How to make Peach Pie Filling From Plain Canned Peaches

So many fun desserts are topped with pie filling. Not only for a burst of flavor, but also for pretty presentation. But today I’m just using it as topping. Buying a full can of pie filling would be a waste.
