Healthy, Cold, Sweet Treat ‘Ice Cream’ Using Bananas & Fruit

It’s hot, hot HOT out there, y’all! Here in NE Texas it seems we went from winter to summer with nary a mild spring day between! So I’m focusing these days on serving cooler foods and cold desserts. 

But I wanna keep it healthy too. RancherMan loves, loves, LOVES ice cream, especially when it’s this hot outside. But it’s just not healthy to indulge in such a high-fat treat too often.

So I started making a cold dessert ‘ice cream’ using frozen bananas for the sweetness and frozen berries for an extra punch of flavor.

Now that it's hot outside I whip up a frozen sweet treat. It's like healthier ice cream using frozen bananas and berries. Delicious, cheap and healthy. #TexasHomesteader

Sometimes a whole apple pie is just too much. But did you know you can bake little individual apple pies in canning jars?

Taste of Fall: Fresh Pear Cake

Pears are one of my favorite fresh fruits. Although I don’t have a producing pear tree yet, when it’s pear season I often have friends that offer for me to pick some of their fresh pears.

There are many ways I can preserve them for later, but I use them fresh for snacking or cooking. This pear cake is a favorite – all moist & cinnamonny. A true taste of fall!
